The VEGGIE THING
At a festival in late July, my friends and I discovered this magical creation. It's simple:
Tomato Pie

Hazelnut Eggplant Lasagna
- Perfect for a chilly winter night.

- 2 large eggplants, sliced lengthwise 3/4-inch thick (8 slices)
- 5 tablespoons olive oil, divided plus more for baking dish
- salt and freshly ground black pepper
- 1 cup thinly sliced shiitake mushrooms
- 2 garlic cloves, minced
- 1 tablespoon freshly chopped thyme leaves
- 1 (15-ounce) container whole milk ricotta cheese
- 3 large eggs
- 1 cup grated Parmesan
- 2 tablespoons oregano leaves
- 3/4 cup roasted and chopped hazelnuts
- 2 cups béchamel sauce (recipe follows)

Preheat oven to 400 degrees F.
Arrange sliced eggplant in a single layer on 2 sheet pans. Brush on both sides using 3 tablespoons of oil and season with salt and pepper. Roast the eggplant until it is soft and golden. Turn slices halfway through, about 25 minutes.
Meanwhile, in a medium skillet add the remaining 2 tablespoons of oil and the sliced mushrooms. Saute until soft for about 7 minutes. Add the minced garlic and chopped thyme. Cook for another 2 minutes. Once the mushrooms are cooked remove and set aside to cool.
In a large bowl add the ricotta, eggs, 1/2 cup Parmesan, oregano, mushrooms, 2 teaspoons of salt and 1/4 teaspoon pepper. Mix well. Brush an 8-inch baking dish with oil.
Layer the bottom of the baking dish with some of the sauce. Layer the eggplant, then the ricotta, then the rest of the sauce. Top with the remaining parmesan and the hazelnuts.For the Bechemel:- 5 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups milk
- 2 teaspoons salt
- 1/2 teaspoon freshly grated nutmeg
In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.
Meanwhile, heat the milk in a separate pan until just about to boil. Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat. Season with salt and nutmeg, and set aside until ready to use.

Coconut Almond Butter Granola

Goooood morning! Or good afternoon, or good middle of the night, because this yummy snack can be enjoyed any time of the day.
You'll need:
-2 cups rolled oats
-3/4 cups of your favorite trail mix (sans M&Ms)
-4 tbsp honey
-1/4 cup coconut flakes
-1.5 cups almond butter
Preheat oven to 300 F. Melt the almond butter in the microwave, it takes about 30-40 seconds. Mix all the ingredients together in a bowl, and then transfer to an oiled pan or baking sheet. Cook for 30-35 minutes.

Chocolate Cake with Sweet Cream Strawberry Frosting
- Butter, for greasing the pans (or cooking spray)
- 1 3/4 cups all-purpose flour, plus more for pans
- 2 cups sugar
- 3/4 cups cocoa powder (free trade cocoa if you can!)
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup shaken whole milk
- 1/2 cup vegetable oil
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup freshly brewed coffee
1 8 ounce container mascarpone, at room temperature
1 cup frozen strawberries
2 tablespoons raspberry (or whatever you have) jam
4-5 cups powdered sugar

BAGELS.
WOO! First post. This is a lot like a diary... except every human being with uncensored internet access could potentially read it. So hey... if you're out there... and you're reading this... HELLOOOOOO WOOOOORLD! (orld orld orld orld)
It's a Thursday, and as usual, I'm procrastinating.
So instead of working towards being marketable and employable by doing my homework, I'm gonna show you how I make bagels.
For the record, delicious breakfast confections> assigned reading about global capitalism; its the size of a small phone book.
This year on Christmas morning, I felt hungry and inspired enough to do something I'd never attempted before: make. bagels. and more importantly, make the house smell like bagels. YUM.
Hand Rolled Bagels:
4 cups bread flour
2...ish... or 4 tbsp honey
1 1/2 tsps salt
1 Tbls vegetable oil
2 tsps instant yeast
1-1/4- 1-1/2 cups of warm water.
Here we go. Mix the dry ingredients in first. I never sift flour, but mixing it with a fork seems to work just fine. Then throw in all the wet stuff. Incorporate everything until you get a stiff dough, adding more flour or water should help everything even out if it doesn't feel quite right.
Put the dough on the counter, and kneed it for ten minutes. Squash it, hit it, punch it, pat it. Then cut it up into eight pieces and roll them into nice little balls. Now give it a rest! The dough balls should be given about 20 minutes of chill time.
Now pre-heat that oven! 415 F should do it.
[TWENTY MINUTES LATER]
Take the balls and roll them into snakes, about 8 to 10 inches long.
Fuze the ends of the snakes together to make a circle looking thing. Now the bagels need to chill for about 20 minutes again In the mean time, Boil a big pot of water and throw a little salt in there. You'll also need to prepare an oiled baking sheet.
[TWENTY MORE MINUTES LATER]
Preso! Bagels are ready for boiling. Put a few into the boiling water at a time. Give them one minute in there, turn them over with some tongs, and give them another minute. Now you'll take them out. Let them hang out for a minute or so, and then throw them on the baking sheet! (Don't THROW them, gently and lovingly PLACE them.)
If you're a purist, bake them for seven minutes like so, take them out, give them another seven, and then EAT THEM! Or don't be impulsive like me and wait for them to cool a bit and then eat them.
BUT! If you want to try something new, dip one side of the bagel in flaky sea salt before you bake them. Or whip up some butter and mix some honey in and spread that on top before you bake them. Either way, they're delicious, and I hope you enjoy them.
